Ingredients
- 3 c chopped zucchini
- ½ c chopped scallions or onion
- ½ c shredded cheese (cheddar, mozzarella, etc.)
- ½ c grated parmesan cheese
- 1 c Bisquick (or Gluten free Bisquick alternatives)
- 4 eggs, slightly beaten
- 1 tsp salt
- ½ tsp pepper
- 1 tsp garlic powder
- ½ c oil
Directions
- Mix Bisquick, zucchini, oil, eggs, scallions, parmesan cheese, cheddar cheese,salt, pepper, and garlic powder in a large bowl, until it looks like thick batter. Mix by hand. Do not beat.
- Pour into a greased pie plate.
- Bake at 350 degrees for 40 minutes.
