Crustless Zucchini Quiche

Ingredients

  • 3 c chopped zucchini
  • ½ c chopped scallions or onion
  • ½ c shredded cheese (cheddar, mozzarella, etc.)
  • ½ c grated parmesan cheese
  • 1 c Bisquick (or Gluten free Bisquick alternatives)
  • 4 eggs, slightly beaten
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • ½ c oil

Directions

  1. Mix Bisquick, zucchini, oil, eggs, scallions, parmesan cheese, cheddar cheese,salt, pepper, and garlic powder in a large bowl, until it looks like thick batter. Mix by hand. Do not beat.
  2. Pour into a greased pie plate.
  3. Bake at 350 degrees for 40 minutes.
