Roasted Red Pepper Vinaigrette


  • 1 cup roasted red peppers
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons sherry vinegar
  • 2 cloves garlic
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper



  1. Place roasted peppers, oil, vinegar, garlic, smoked paprika, salt and pepper in a blender or food processor and puree until smooth
  2. Or blend in a large glass measuring cup or wide jar with an immersion blender
