Ingredients
- 1 cups of butter, softened
- 3 cups of sugar
- 3 eggs
- 3 cups of all purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- ½ tsp nutmeg
- 1 ½ cups cooked, winter squash puree
- 1 tsp vanilla extract
- ¾ cups chopped walnuts or pecans
Directions
- Preheat oven to 350 degrees F
- Cream butter; gradually add sugar, beating well
- Then add eggs, one at a time, beating well after each addition
- Combine next seven ingredients; add to creamed mixture alternatively
with the squash puree, beginning and ending with flour mixture - Stir in vanilla and pecans
- Spoon into two greased small loaf pans or one large one
- Bake for one hour
