Winter Squash Bread

Ingredients

  • 1 cups of butter, softened
  • 3 cups of sugar
  • 3 eggs
  • 3 cups of all purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • ½ tsp nutmeg
  • 1 ½ cups cooked, winter squash puree
  • 1 tsp vanilla extract
  • ¾ cups chopped walnuts or pecans
     

Directions

  1. Preheat oven to 350 degrees F
  2. Cream butter; gradually add sugar, beating well
  3. Then add eggs, one at a time, beating well after each addition
  4. Combine next seven ingredients; add to creamed mixture alternatively
    with the squash puree, beginning and ending with flour mixture
  5. Stir in vanilla and pecans
  6. Spoon into two greased small loaf pans or one large one
  7. Bake for one hour
